Dinosaur Fruit Skewers

Serves 4 Diabetic Gluten Free Heart Healthy

Need a quick and fun snack to feed all of your hungry little dinosaurs? These Dinosaur Fruit Skewers are a healthy and delicious recipe to satisfy even the most ravenous appetites. An assortment of fresh fruit paired with a creamy yogurt dip make for a perfect kid-friendly snack.

Ingredients

Yogurt Dip

  • 4 oz low-fat cream cheese, softened
  • 1 cup nonfat vanilla Greek yogurt
  • 1 Tbsp maple syrup
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg

Fruit Kebabs

  • 1 large 1-inch thick watermelon round
  • 12 green grapes
  • 4 cantaloupe melon balls
  • 4 strawberries
  • 4 bamboo skewers

Preparation

Yogurt Dip

  • In a small bowl, beat together the cream cheese, yogurt, maple syrup, cinnamon and nutmeg until smooth. Transfer to a serving bowl, cover with plastic wrap and place in the refrigerator.

Fruit Kebabs

  • Using a 3-inch dinosaur footprint cookie cutter, cut out 4 footprints from the round of watermelon.
  • Assemble the fruit skewers by alternating the fruit on each skewer, ending with the dinosaur footprint at the top. Serve immediately with the chilled yogurt dip.
